I got this recipe from one of the magazines that comes with the weekend paper. We tried it tonight, and we loved it! So much so, we have to add it to the website so we can find it wherever we are in the world!

Nat made this recipe for her birthday party and it was very yummy – a real hit. It probably doesn’t help the waistiline but hey, it tastes great!
Ingredients
Biscuit Mixture:
1 x large packet of Digestive Biscuits
3 Tbs Demerara sugar (otherwise known as raw cane sugar)
4 oz butter
Lemon Mixture:
5 x eggs – separated
6 Tbs caster sugar

1 1/2 cups cooked pasta shells
1/2 cup lightly toasted pumpkin or sunflower seeds
1/2 cup chopped capsicum
1 cup chopped celery

250g each of frozen blackcurrants & boysenberries
- Simmer for 15 minutes with 1/2 cup of sugar & 1/2 cup of water.

3 1/2 cups flour
2/3 cup butter
2/3 cup shortening
2 tsp baking powder
1 tsp salt
2 tsp vanilla
1 1/2 cup sugar
- Cream shortening, butter & sugar
- Add eggs & dry ingredients
- Add vanilla & chill overnight
Roll out & cut out cookies. Bake 4-6 mins at 180-190 Deg C.
When cool, ice & enjoy.

1 cup vegetable stock or water

125g butter
1/2 tin condensed milk
1 cup coconut
1 Tbsp lemon rind
Melt ingredients together then add 1 packet of wine biscuits.
Icing
1 Tbsp butter – melt with 1 Tsp lemon juice
Add 1 cup icing sugar and 1 Tbsp coconut.
Ice the base & set in fridge.
